For user training, the book I used to recommend, Henry McGilton's
Intoducing the Unix System, is no longer in print.  In recent history,
UNIX For Dummies has seemed to do the trick.

If you want some basic system admin training, the UNIX System
Administration Handbook by Nemeth, Snyder, Seebass & Hein works well.

If you have a 10-20 week time horizon, Northeastern University offers
night course in UNIX system administration
(www.northeastern.edu/cont-ed/soa - then hunt for UNIX).

I don't know if they're still active, but there's a system admin
organization called BBLISA (Back Bay Large Installation System
Administration) at www.bblisa.org that can probably provide pointers
to more resources.
