 There are a number of ways you can edit a PDF on Linux. 
first, OpenOffice can produce PDFs, but cannot read them. 
Koffice is able to read, edit and produce PDFs. 
pdfedit is another tool I have not yet worked with. 
Abiword also can edit and produce pdf files. 

All the above software is available on most Linux distributions or 
freely available for download. 

There are also a number of tools you can use to convert PDF files to 
text.
