If you toss away headers, you won't be able to search on them 
later. For example, you didn't mention In-Reply-To:. And X-Face 
can be useful... and you won't be saving much disk space, 
either. Oh, and disk gets cheaper every year.

Sure. Define a key with a bind for a built-in or a macro for 
several functions: 

bind index x noop 
bind index X exit 
macro index \Cx "<enter-command>unset wait_key\n<pipe-entry>sa-learn --spam\n<enter-command>set wait_key\n<delete-message>" "spam &amp; delete" 

The manual at www.mutt.org is very useful.
