Install packages on Centos that are the current supported
versions of the things on SLES.

Configure them.

Copy the data across.

Test carefully. Fix what breaks.

Test again.

Schedule a changeover time.

Copy the data again.

Stop the old server.

Copy the data one last time.

Start the new server.

Test again.

Wait for user complaints to find out what you missed.
