I think that'd be a bad thing--most mailreader programs have a "reply
to sender" and a "reply to all" button which do the right things,
respectively, the way the list is currently configured.

If you change the Reply-To field, effectively both of those buttons go
to the list.  That'd be bad if the respondent is expecting to send a
private message, and doesn't look closely at the headers before
hitting 'send'.
