yes. I do this type of thing all the time. 
In sendmail you can set up your school as a smart host. You can set up
sendmail to take care of the domain. Or you can use your email client to do
it. 
I am currently using exmh as my email client. I have several profiles set up
so that my from address becomes gaf at blu.org. For the most part, my box is my
smtp server.

I also use procmail to filter my incoming email and deposit the email into
the appropriate folders.
