My opinions...

uw-imap: The. University. Of. Washington. IMAP. Server. Is. Extremely.
Slow. Because. It. Uses. Mbox. Format.

dovecot: I find it locks up quite a bit when used in conjunction with
          Gnus/IMAP and Mozilla/IMAP.

cyrus: a few years ago when I tried this it seemed difficult to setup
when I tried to compile it from source code.

courier-imap: I find this to be straightforward to setup. I've got
this working with procmail, SpamAssassin, several IMAP
clients. I've had 25000 messages in a Maildir folder
and courier-imap has handled these just fine.
