Buy a multiple output Nvidia card.  Use the latest driver and nvidia-settings.
Use monitors that support EDID.  With modern hardware, you don't have to 
hand tweak the xorg.conf any more.

My last two installs with this sort of set up have had dual-head going 30
seconds after the first login, since the nvidia utility can configure it on the
fly and it will let you write out the corresponding xorg.conf.
