You already mentioned the software I'd recommend, but I'd also consider
a hosted solution, unless you need to have it under a domain you control
or just want the experience of installing and maintaining the software.
For example, Wikispaces, which has a WYSIWYG editor, and is what we use
for http://blu.wikispaces.com/ .
