Some of the Standard books on cryptography: Doug Stinson: Cryptography: Theory and Practice Vanstone et al : Handbook of Cryptography The above are CRC press. Schneier: Applied Cryptography I've used each of them at one point or another. The last book is good for an intro where you can avoid the math the first go-round. Stinson is written at a more advanced text book level. Vanstone et.al. is really a reference book.
