They probably do it because windows boxen insist on a single address for all
outgoing mail.

If an ISP *monitors* outgoing mail, I suspect it's because they want to know
who my friends are, and don't give a damn about what I say to them: ergo,
encryption wouldn't help unless I used anonymous relay sites.

Of course, even we paranoids have enemies, but I never attribute to the NSA
what may adequately be explained by insurance salesmen looking for leads.
