I like Evolution and use it exclusively for the following reasons:
1.  It does just about everything you mentioned in your requirements
2.  It looks and feels a lot like MS Outlook (some may hate that)
3.  Most importantly, it works flawlessly with my company's MS Exchange
server allowing me to share calender information, LDAP address books,
multiple accounts, great spell checker, access to Exchange folders etc.

I haven't tried Thunderbird yet, but just thought I would add my 2 cents
on Evolution.
