If all you need is an MTA, that's what I'd use. If you want to download mail as well, I'd use dovecot and perhaps even have them work out of LDAP or a MySQL database. There are nice tutorials online complete with configuration files for setting up such system or small parts of them. I'm happy to help you find them if you have trouble find them.
