I use dovecot on Fedora, since I don't have any "mail-only" users (which is the primary advantage of cyrus IIRC). Basically just install it and turn on the service; I don't think I did any manual configuration. I had some issues a few versions back (FC6 maybe?) with SELinux, but they've long since been resolved.
