In the near future, HTC's phones will all be sold with an unlocked bootloader. It appears that Motorola is going to do something similar. So my suggestion is to track CyanogenMod, find a phone that they support, and go with that. You get root, as little or as much bastardization as you want, and updates from an actual open source community.
