During initial setup, they prompt you to configure mail migration via imap. You enter the old imap server, username & password, and google simply sucks the whole mailbox content over from the old provider. For *mail* it should work great. But imap obviously doesn't support contacts/calendar. (Or tasks or anything else you might care about.) You just have to export those things individually, manually, and import. Their calendar & contacts import tools are pretty straightforward. Built-in to google apps.
