I've been backing my info up and storing it outside of the phone without going through any server at all. There are a variety of applications that will back up various types of info to the phone's filesystem. I found one in Google's Play Store called "Super Backup" that will back up any or all of: Apps, SMS, Contacts, Call Logs, Calendars, Bookmarks. Once you've got the data in files on the phone, plug the phone in to your computer with a USB cable so the phone's filesystem appears as a local filesystem, and copy the files. Admittedly this isn't the same as synching with an application on the computer, but at least my data is archived on my own computer without having been transmitted through Google's or anyone else's. Another Android tool I've found very useful is File Manager from Rhythm Software. It gives an "ls -l"-like listing and doesn't waste huge amounts of screen real-estate like other file managers I've tried.
