How to view/edit Unicode documents with emacs and SSH??

Here's a possibly tough question for you experts:

Using a Windows program like SecureCRT, I can remotely login in to a 
Linux server to view/edit ASCII files using "cat" and "emacs".  How can 
I view/edit Unicode UTF-8 files?
