i've run vmware server both ways, windows host/linux guests, linux
host/windows guests.
i've never seen a guest stop processing when the windows focus shifts
from vmware.
on a windows host, i set the .vmx process for each guest to run at below
normal priority. my linux guests (code dev and test) continue to run
without problem.
i only install vmware server on windows if i have some
application/hardware that can't live inside vmware. that being said,
the only apps i have problems with are outlook and some directx video
games.
i've had a difficult time trying to convince any windows mail
administrator (?) to enable pop access just so i don't have to use
snotlook...

I was helping one fo the guys at work with VMware on Friday; it was the
first time I tried Workstation on a Windows XP host; I normally run it
with a Linux host. Whenever he took the focus off of VMware to do other
things, we found that VMware just stopped; it didn't continue running in
the background the way it does on a Linux host.
Also, I gave VMware Server a try last week; I have a server for rsync
backups that's essentially idle during the workday, so I installed
vmware server there to try it out. Running it on a separate machine gave
it much better performance than running Workstation on my laptop, much
more so that I had expected.
