Replacing Dovecot is also my goal.

Doesn't Stalwart offer a way to turn the other stuff off, so you can
continue doing everything else just like you've always done? If the
answer is "no", that's a horrible violation of modularity. If the
answer is "yes", I'm *very* interested. My attitude toward Dovecot is
"Fool me once, shame on you. Fool me twice, shame on me." I don't want
to end up a fool somewhere down the road.
