Start -> Settings -> Control Panel -> Automatic Updates

Uncheck 'Keep my computer up to date automagically'

(This won't work if you are configured in a Software Update Service 
Environment, or don't have Admin rights)

As a side note, speaking for countless people on Internet, if you remove 
patches, please don't get hacked. I really don't want to deal with 
another 0wn3d windows box spewing crap across the Internet.
