I have never heard of NAT hurting performance on NFS. I understand all the
networking complexity of connecting machine A to server B through a NAT,
but once connected, I never experienced any other issues.

I'd love a link or something so I can learn. My company has a product that
may, in fact, be configured by a customer like this and I'm concerned that
there is an issue of which we may not be aware.
