At boot time, assuming your default tag is linux: Boot: linux 3 This will cause you to boot up into run mode 3, which is text mode. Normally, when I do an install, I try to set the system up not to automatically boot with X, so I can test my X installation with startx. You can kill the X server with ctl-alt-bacspace, but in run level 5, it will simply respawn. Also, ctl-alt-f1 (or f2, f3, f4, f5, or f6) will put you into a virtual terminal from which you can set your run level back to 3 using /sbin/telinit 3 (or /sbin/init 3).
