gratuitous use of echo?

I write a lot of sh scripts that do something like this: 

FOO=`someprogramthatproducesoutput` 

and then: 

echo $FOO | awk | sed | etc 

to mangle/unmangle the string in $FOO. 

Is there a way to get at the string in $FOO without using echo?
