Normally companies only warranty operation to chip temps of 85 C so you may need to find a company that does business with the military. You can't do a 125 C spec in the (Cree) plastic package, you need a glass hermetic ceramic package. 
 
This one goes to 100 C.

With this one, the junction temp can go to 150.

You only have 25 deg C headroom for temperature drop from the thermal resistance to air (so you have heat sink concerns).
