I don't recall the details offhand, but one possible strategy would be to usea catchall alias to pass the mail to a script, and then have the script reinject the message into postfix. I recall seeing this strategy described as one possible way to configure spamassassin for postfix. I think the important word to include in your google search is "reinject".
